This recipe for Mediterranean shrimp salad is delicious, nutritious, and pretty!
They look so good together on a plate, and they're all good for you. The shrimp gives you protein and the veggies give you vitamins. Plus it's easy to make!
1/2 lb shrimp, peeled and deveined
2 limes, freshly squeezed
1 red onion, finely chopped
1 Tablespoon dried oregano
2 1/2 cups green lettuce
1 Tablespoon Saucy Passion Fruit habanero hot sauce
1 Tablespoon Olive Oil
1 Tablespoon Honey
2 Tablespoons corn
½ tsp Kosher salt
¼ tsp Pepper
- In a bowl, mix dried oregano, onion, lime juice, olive oil, salt, pepper, honey and Saucy Passion Habanero Fruit hot sauce. Save half of the mixture in a different bowl.
- Place the shrimp in the bowl and let it sit for 10 minutes.
- In a pan, cook the shrimp for about 3 to 5 minutes. Make sure not to overcook the shrimp.
- Add the shrimp to the mixture saved and add the corn.
- Serve over lettuce
